Is there anything more perfect on a weekend than a long, lazy delicious brunch? No, we think not. So, here is one half of the teams favourites, French toast (brioche) with bananas and syrup!

It’s easy, simple, tasty and a little indulgent, just as a good brunch should be.

Shopping list / From the pantry

  • 50ml/2fl oz whole milk

  • 2 free-range eggs

  • 2 thick slices slightly stale brioche

  • 2 knobs unsalted butter

  • 1 tbsp caster sugar

  • pinch – ½ tsp ground cinnamon, to taste

  • 1 ripe banana, peeled and sliced

  • maple syrup, to taste

 

Get cooking

Whisk the milk and eggs together in a wide, shallow bowl ready to coat your brioche.

Place your brioche slices into the egg mixture and leave soak for 30 seconds on each side to ensure that they’re evenly coated.

Palace a large non-stick frying pan over a medium-high heat to melt a knob of butter, once melted fry both slices of brioche for two minutes on each side until beautifully golden-brown and crisp.

Remove from the pan and place onto a serving plate.

Next combine the caster sugar and cinnamon in another bowl and set aside for later.

Add another knob of butter to your pan, this time over a high heat. Once it’s melted, add the sliced banana to the pan, toss in the melted butter ensuring it’s coated and fry for two minutes until caramelised lightly on the outside.

Place your caramelised banana on top of your french toast, sprinkle with your cinnamon sugar and drizzle generously with maple syrup.

 

Time to eat

Grab a knife and fork and dig in, best enjoyed together with a cuppa or cup of coffee on a Sunday morning! (well actually, any time!)
